Popovers
1 cup flour
1 cup almond milk, room temp.
2 eggs, room temp.
1 Tbsp unsalted butter, melted
1/8 Tbsp kosher salt
safflower oil
mini popover or mini muffin pan
- Preheat oven to 450 degrees.
- Whisk eggs and milk in medium bowl. Add flour and whisk until incorporated with few lumps. Add melted butter and whisk until no lumps.
- Add 1/3 tbsp of oil into each mini cup of the pan. Place pan into oven for 5 min. or until the oil gets hot and smokey.
- Remove hot pan and quickly pour batter evenly into each cup (3/4 full per cup).
- Place pan back in the oven. Bake 10 min.
- Turn heat down to 350 degrees, bake another 7 min. Do not open the oven.
- Remove popovers from pan. Serve immediately.
- Cut open and spread with butter, jam, etc.
