Popovers

1 cup flour
1 cup almond milk, room temp.
2 eggs, room temp.
1 Tbsp unsalted butter, melted
1/8 Tbsp kosher salt
safflower oil
mini popover or mini muffin pan

  1. Preheat oven to 450 degrees.
  2. Whisk eggs and milk in medium bowl. Add flour and whisk until incorporated with few lumps. Add melted butter and whisk until no lumps.
  3. Add 1/3 tbsp of oil into each mini cup of the pan. Place pan into oven for 5 min. or until the oil gets hot and smokey.
  4. Remove hot pan and quickly pour batter evenly into each cup (3/4 full per cup).
  5. Place pan back in the oven. Bake 10 min.
  6. Turn heat down to 350 degrees, bake another 7 min. Do not open the oven.
  7. Remove popovers from pan. Serve immediately.
  8. Cut open and spread with butter, jam, etc.
