Kale Ginger Salad
You can adjust all the ingredients in this recipe to suit your own taste. If you like cranberries, add a little more. If you don't like almonds, swap them out for chopped pecans or walnuts. Mix it up! It's fun.
Ingredients:
1-2 bunches of kale
1/2 cup of dried cranberries
1/4 cup of slivered almonds
1-2 pieces of thinly sliced candied ginger
1 lemon
Dressing:
extra virgin olive oil
sea salt, fresh ground black pepper
- Wash kale and break it up into bite-size pieces. Squeeze a little lemon juice on the kale and massage with hands. (Lemon juice will help cut the bitter.)
- Mix cranberries and almonds with kale.
- Sprinkle top with sliced candied ginger or mix ginger into salad.
- Drizzle with extra virgin olive oil. Salt and pepper as needed.
