Kale Ginger Salad

You can adjust all the ingredients in this recipe to suit your own taste. If you like cranberries, add a little more. If you don't like almonds, swap them out for chopped pecans or walnuts. Mix it up! It's fun.

Ingredients:

1-2 bunches of kale
1/2 cup of dried cranberries
1/4 cup of slivered almonds
1-2 pieces of thinly sliced candied ginger
1 lemon

Dressing:

extra virgin olive oil
sea salt, fresh ground black pepper

  1. Wash kale and break it up into bite-size pieces. Squeeze a little lemon juice on the kale and massage with hands. (Lemon juice will help cut the bitter.)
  2. Mix cranberries and almonds with kale.
  3. Sprinkle top with sliced candied ginger or mix ginger into salad.
  4. Drizzle with extra virgin olive oil. Salt and pepper as needed.
