Green Bean Salad

Ingredients:

1 1/2 lb green beans (trimmed, cut into 2" length)

Dressing:

2 Tbsp red wine vinegar or balsamic vinegar
1 tsp Dijon mustard
1 clove garlic (peeled and minced)
5 Tbsp extra-virgin olive oil (good quality)
1/2 cup chopped green onion
1 1/2 Tbsp chopped parsley

  1. Cook green beans in salted boiling water until tender. 
  2. While beans are cooking, whisk together vinegar, mustard, garlic, oil, salt, pepper.
  3. Pour dressing over green beans while they are warm.
  4. Toss green beans with green onions and parsley.
  5. Serve chilled or at room temperature.
