Green Bean Salad
Ingredients:
1 1/2 lb green beans (trimmed, cut into 2" length)
Dressing:
2 Tbsp red wine vinegar or balsamic vinegar
1 tsp Dijon mustard
1 clove garlic (peeled and minced)
5 Tbsp extra-virgin olive oil (good quality)
1/2 cup chopped green onion
1 1/2 Tbsp chopped parsley
- Cook green beans in salted boiling water until tender.
- While beans are cooking, whisk together vinegar, mustard, garlic, oil, salt, pepper.
- Pour dressing over green beans while they are warm.
- Toss green beans with green onions and parsley.
- Serve chilled or at room temperature.
