Biscuits
1 cup unbleached all-purpose flour
1 cup cake flour
2 tsp baking powder
2 Tbsp turbinado sugar
1/2 tsp baking soda
1/2 tsp kosher salt
8 Tbsp cold butter
3/4 cup cold buttermilk
- Preheat oven to 450 degrees.
- In a food processor, combine all dry ingredients. Pulse.
- Cut cold butter into 1/2 inch cubes and scatter over the flour mixture. Pulse 12 times until butter is pea-sized.
- Put mixture into medium bowl and add buttermilk. Mix swiftly until just combined.
- Use ice cream scooper to quickly scoop dough onto baking sheet while dough is still cold.
- Bake 15 min.
- Serve warm with jam, butter etc.
