Biscuits

1 cup unbleached all-purpose flour
1 cup cake flour
2 tsp baking powder
2 Tbsp turbinado sugar
1/2 tsp baking soda
1/2 tsp kosher salt
8 Tbsp cold butter
3/4 cup cold buttermilk

  1. Preheat oven to 450 degrees.
  2. In a food processor, combine all dry ingredients. Pulse.
  3. Cut cold butter into 1/2 inch cubes and scatter over the flour mixture. Pulse 12 times until butter is pea-sized.
  4. Put mixture into medium bowl and add buttermilk. Mix swiftly until just combined.
  5. Use ice cream scooper to quickly scoop dough onto baking sheet while dough is still cold.
  6. Bake 15 min.
  7. Serve warm with jam, butter etc.
